It’s been a big February in the kitchen at our Katherine Training Hub with our women’s and men’s groups completing the next stage of the Kukimbat Gudwan Daga hospitality training.
We’re delighted that the program has expanded this year to include men and students from our community partners.
As well as our Nyirrunggulung-RISE ladies, we also welcomed Josephine, Kirsty and Roberta from RISE Ventures and students from Barunga School!
Keiran from GTNT Group is back and had a full house for the next stage of the training – Safe Food Handling Practices.
Alongside their lesson, the ladies cooked up a delicious feast of chorizo and prawn linguini, hoy soy chicken stir fry and buttermilk pancakes with maple bacon and grilled banana.
Safe Food and RSA training for the Men’s Group
A week after the ladies cooked up a storm, it was the men’s turn.
Alongside the theory lessons on food handling, they learnt to make delicious Vietnamese banh mi!
This is a new dish for them and they enjoyed expanding their food horizons and cooking with fresh, flavourful ingredients.
They enjoyed learning how to cook with Asian herbs and pickled vegetables, food hygiene and cooking as a team.
The next day, they were training in another important part of hospitality – RSA Reasonable Service of Alcohol.
The skills they learnt included:
- Responsibilities of serving alcohol
- Legal requirements
- Standard drink sizing
- Reducing problems/conflicts in licenced premises
- Speaking to customers in a polite and respectful way
This is a valuable ticket to have when looking for a role in the industry.
Once their theory was completed, they moved into role play scenarios which included working with the public, checking IDs and answering questions about legal obligations.
Practice Makes Perfect
Outside of their formal training, the ladies at our Barunga Connectivity Hub put their new hospitality skills in to practice.
For the past 4-months they’ve learnt everything from kitchen hygiene to cooking recipes and making barista coffees.
To keep their skills fresh, they got together to make a healthy Mexican chicken drumstick and salad for lunch
